Jean-Michel Savoie (chair) Head of the INRA research Unit : Mycology and Food Safety. With expertise in microbial ecology and biochemistry, Dr. Jean-Michel Savoie have been working on edible mushroom biology for 20 years and have developed research projects on the chemical and microbial quality of cultivation substrates, on the interactions between mushrooms and the microorganisms in their environment (including pathogens), on mushroom quality and on genetics. He published more than 40 scientific papers and numerous contirbutions in congress proceedings
