\r\n\tWith the discovery of more unconventional heavier crude and alternative hydrocarbon sources, primary upgrading or cracking of the oil into lighter liquid fuel is critical. With increasing concern for environmental sustainability, the regulations on fuel specifications are becoming more stringent. Processing and treating crude oil into a cleaner oil with better quality is equally important. Hence, there has been a relentless and continuous effort to develop new crude upgrading and treating technologies, such as various catalytic systems for more economical and better system performance, as well as cleaner and higher-quality oil.
\r\n\r\n\tThis edited book aims to provide the reader with an overview of the state-of-the-art technologies of crude oil downstream processing which include the primary and secondary upgrading or treating processes covering desulfurization, denitrogenation, demetallation, and evidence-based developments in this area.

The science, which is concerned with the study of plant diseases and their causes, is known as plant pathology. Therefore, all scientists concerned with this science constantly attempt to treat the diseased plants via various methods. This approach of scientific research is very important owing to the economic and hygienic yield for humans and animals. The phytopathogens are two types: biotic factors, which include all microbes and parasitic plants, and abiotic factors, which include all environmental factors. Essentially, the plant pathology is correlated with other sciences such as entomology, bacteriology, mycology, virology, and weed science due to deleterious effects of insects, bacteria, fungi, viruses/viroids, and weeds on plants, respectively. The first step of plant disease treatment is observation of definite and clear symptoms on the plants. These symptoms give an initial indication for the type and cause of plant disease, which may end with the death [1]. The modern approach of plant disease control depends on biological control agents such as the production of antimicrobial agents and the production of genetic-improved strains of plants, which are more resistant to plant diseases. This approach is more favorable because it is friendlier with the environment and healthier for humans and animals [2]. The infected part of the plant gives an indication of the type of plant disease, such as infected root which is usually correlated with root-rot disease [3]. The plant diseases can be classified according to several parameters: disease symptoms, infected organ, infected plant type, and the type of phytopathogen. The latter is considered the more useful criterion used for plant disease classification, because it easily determines the disease cause, potential disease complications, and possible control methods [4]. According to this criterion, plant diseases are classified into two types: infectious (biotic) diseases, which are caused by eukaryotes, prokaryotes, parasitic higher plants, viruses/viroids, nematodes, and protozoa, and noninfectious (abiotic) diseases, which are caused by different extreme environmental conditions [5].
\nThe plant disease diagnosis depends on the exact determination of the disease cause. Generally, there are two plant disease causes: the pathogens and/or environmental factors. The former leads to infectious diseases, while the latter leads to noninfectious diseases [6].
\nThere are wide range of phytopathogens which cause infectious plant diseases such as fungi, bacteria, viruses, viroids, mollicutes, parasitic higher plants, and protozoa. The infectious disease means the ability of phytopathogen to transfer from the infected plant to another healthy one and causes the same disease and the same symptoms. The most phytopathogens can inhabit the internal environment of plants; however, some others can live on the plant surface such as some fungi, bacteria, and parasitic higher plants [7].
\nSome plant diseases are developed due to growing certain plants attached on or in other plants, where they take all required nutrients without benefit sharing; these plants are called parasitic higher plants. This abnormal relationship leads to weakness of healthy or host plant. The parasitic higher plants are usually found attached with the surface of the host plant, such as dodder, mistletoe, witchweed, and broomrape [8].
\nThe nematodes are one of most common phytopathogens which have definite symptoms. These symptoms only appeared in the infected site. The nematode infections in or on plants are widely distributed especially in proper environments such as moderate temperature and high humidity [9].
\nInterestingly, there are two main types of fungi appearing on plants: pathogenic and saprophytic. The pathogenic fungi live in or on plant tissues and cause serious complications for the vital physiological functions of plants, while saprophytic ones live in or on dead tissues. Accordingly, the diagnosis of plant disease must be exactly carried out. The exact diagnosis and determination of fungi take place by microscopical examination to identify the mycelial morphological characteristics, whatever fruiting structures and spores. After complete identification for the fungus and the symptoms of plant disease, the latter should be compared with that reported in the reference. This study will exactly determine whether the fungus is a pathogen or a saprophyte. Although microscopical examination is an essential and effective method for fungal identification, it only sometimes cannot lead to exact identification due to the absence of fungal fruiting structures and spores on infected plant tissue. Therefore, an alternative method must be used, such as using selective media for isolation, identification, or promotion of sporulation. On the other hand, some fungi need to be incubated under certain temperature, aeration, or light conditions to produce spores [10].
\nThe appearance of bacterial growth in or on plant tissues means that bacterial plant disease may be present, because saprophytes may be present. Therefore, accurate bacterial identification must be carried out by using microscopical examination and physiological parameter determination. The selective media are essentially used in the bacterial identification to determine the bacterial genus and species in some cases. Moreover, the confirmatory test of bacterial pathogenicity may be carried out by inoculation of single pure bacterial colony in the healthy plant, reproducing the same symptoms that appeared on the infected one. Moreover, immunodiagnostic techniques or serodiagnostic assays can be used, such as agglutination and precipitation, fluorescent antibody staining, and enzyme-linked immunosorbent assay (ELISA). There are several advantages for these techniques such as quite sensitivity, fairly specificity, rapid, easy to perform, and it is expected that standardized, reliable antisera will be available soon. Furthermore, there are recent methods used for bacterial identification, which depend on the automated analysis of bacterial fatty acid profile. The molecular biological techniques are also widely used [11]. There are uncommon microorganisms called mollicutes. These microorganisms are very small where they must be examined by an electron microscope. Mollicutes have polymorphism and lack cell wall–like mycoplasma. These microorganisms habit the young phloem cells as a convenient host, and cause severe plant diseases such as plant stunting, yellowing or reddening of leaves, proliferation of shoots and roots, production of abnormal flowers, and eventual decline and death of the plant. Mollicutes cannot be cultured on nutrient media except for the genus
There are distinctive types of plant diseases caused by viruses/viroids. These diseases have definite and clear symptoms, which easily support disease diagnosis and are considered main advantage. Apart from this advantage, some recent techniques are widely used for disease diagnosis and virus identification, such as virus transmission tests to specific host plants by sap inoculation, grafting, certain insect, nematode, fungus, and mite vectors. Moreover, serodiagnostic tests are used for this purpose such as enzyme-linked immunosorbent assays, gel diffusion tests, micro-precipitin tests, and fluorescent antibody staining. The electron microscopy techniques as negative staining of virus particles in leaf dip or purified preparations are also used, as well as immune-specific electron microscopy. On the other hand, there are more accurate techniques used for disease diagnosis and virus/viroid identification, such as electrophoretic tests and hybridization of commercially available radioactive DNA complementary to a certain virus DNA or RNA, or viroid RNA, with the DNA or RNA present in plant sap and attached to a membrane filter (immunoblot) [13].
\nSometimes, some plants are exposed to coinfection by two or more pathogens, which lead to the same or different disease symptoms. Therefore, the differentiation and identification of these pathogens are very essential to exactly determine the disease cause. The differentiation and subsequently identification are carried out by all techniques that are mentioned above [14].
\nOccasionally, some plant diseases have abiotic origin such as environmental factors; these diseases are called noninfectious diseases. Abiotic environmental factors have deleterious effects on plants under extreme conditions, because they can negatively effect on the vital physiological functions and may lead to death, for example, the presence of considerable amounts of toxics in the soil or in the air, deficiency of water, oxygen, or minerals, and extreme conditions for temperature, humidity, oxygen, CO, or light [7].
\nThe term parasitism called on the state in which an organism (parasite) lives on or in another one (host) to obtain its required nutrition. Usually, the parasitism is correlated with pathogenicity, which means the ability of an organism to cause a disease. However, the parasitism in some cases leads to a benefit relationship called symbiosis, in which both plant and organism alternate the benefits, such as bacterial nodules in the roots of legume plants and the mycorrhizal infection of feeder roots of most flowering plants. In the case of parasitism-pathogenicity relationship, the plant is diseased with the appearance of different symptoms such as increased respiration, disintegration or collapse of cells, wilting, abscission, abnormal cell division and enlargement, and degeneration of specific components such as chlorophyll [15]. The most common plant pathogens are fungi, bacteria, mollicutes, parasitic higher plants, parasitic green algae, nematodes, protozoa, viruses, and viroids. These parasites cause serious plant diseases, because they have the ability to penetrate the plant tissues to feed and proliferate in it, and withstand the conditions in which the host lives. These pathogens are also called obligate parasites because they can only live in their living hosts. On the other hand, there are certain pathogens such as most fungi and bacteria can live on either living or dead hosts and on various nutrient media, so they are called nonobligatory parasites. Some nonobligatory parasites can grow saprophytically on dead organic matter, and therefore called semi-biotrophs/facultative saprophytes [16]. There is a type of a life called facultative parasitism, in which an organism grows saprophytically (necrotrophs); however, under certain conditions, they attack living plants and cause a disease; these parasites are called facultative parasites. The type or degree of parasitism does not affect the disease severity. For instance, many diseases caused by weakly parasitic pathogens are much more damaging to a plant than others caused even by obligate parasites. Lysozymes are a main mechanism of most nonobligatory parasites by which they can degrade the plant cell wall and subsequently cause invasion and infection [17].
\nPhytopathogens differ among each other with respect to the plant type, the location of infection, and the age of the organ or tissue (location of infection). The specificity of plant pathogens has various degrees; some pathogens have only one target species of plant, while other pathogens can attack only one genus of plants, and eventually some others have a wide range of hosts, belonging to many families of higher plants. As mentioned above, phytopathogens differ among each other with respect to the location of infection; some of them grow on roots, stems, leaves, fruits or vegetables, and phloem or xylem. Some phytopathogens can only infect the seedlings or the young parts of plants, while the others can only infect the mature tissues [18].
\nThe plant disease means the occurrence of physiological disorder(s) due to biotic agents such as microbial infection and/or abiotic agents such as extreme environmental factors. In order for the plant disease to occur, an interaction must happen between two components: the plant and disease cause, which leads to physiological disorders. The disease cause is either biotic agent or abiotic agent as mentioned above. Interestingly, the biotic agents lead to infectious diseases, which develop under suitable environmental conditions. Therefore, the infectious diseases (occurred by pathogens) are not developed under extreme environmental conditions. This means it was impossible to get infectious and noninfectious plant diseases at the same time. The abiotic agents (environmental factors) play an important and vital role in the disease development and severity or disease resistance. This matter depends mainly on different factors: the plant family, the plant age, plant genetic type, pathogen virulence race, pathogen inoculum size, and pathogen dormant state. Therefore, we can imagine the plant disease as a triangle, which is called "disease triangle." The three sides of this triangle are the plant, microorganisms, and the environmental factors. The length of each side is proportional to the sum of the characteristics of the other two sides. For example, if the plant is resistant, the host side and the amount of disease would be small or zero, whereas if the plant is susceptible, the host side would be long and the potential amount of disease could be great [19].
\nThe disease cycle is a series of definite events, which lead to the disease development and pathogen propagation. These events include inoculation, prepenetration, penetration, infection, colonization (invasion), and growth and reproduction of the pathogen [20].
\nInoculation is the pathogen or any part of the pathogen that contacts with the plant at certain site to initiate the infection process, such as spores, sclerotia, or fragments of mycelium of fungi may be fungal inoculum. In some cases, the inoculum is represented as an intact cell as in bacteria, mollicutes, protozoa, viruses, and viroids. There are two types of inoculum: primary and secondary inoculum, which in turn cause primary and secondary infection. The primary inoculum lives dormant in the winter or summer and causes the original infections in the spring or in the autumn. The secondary inoculum is that produced from primary infections. The primary inoculum is more abundant than secondary inoculum and closer to the crop, and caused more severe diseases and the losses that result. The inoculum has two sources: inside and outside sources. The inside source in which the inoculum is produced on the plant, plant debris, or on the soil, such as fungal and bacterial inocula of perennial plants, is produced on the branches, trunks, or roots of the plants. The outside source of inoculum is in which the inoculum comes into the field with the seed, transplants, tubers, or other propagative organs or it may come from sources outside the field. In some cases, the inoculum is produced on the plant surface as in fungi, bacteria, parasitic higher plants, and nematodes, which either produce their inoculum on the surface of infected plants or their inoculum reaches the plant surface when the infected tissue breaks down. However, the inoculum may be produced within the plant as in viruses, viroids, mollicutes, fastidious bacteria, and protozoa. Interestingly, there is an expression called inoculum landing or inoculum arrival, which means incoming of the inoculum to the host plants passively by wind, water, and insects [21].
\nSome pathogens directly penetrate the plant tissues by their vectors and then are surrounded by cytoplasm, cell membrane, or cell wall of plant cell, such as mollicutes, fastidious bacteria, protozoa, and most viruses. In other cases, the pathogen firstly makes contact with the external surface of the plant, and then penetration process takes place, such as fungi, bacteria, and parasitic higher plants. The adhesion of the pathogen with plant surface is carried out by mucilaginous substances found on the pathogen surface or at its tip. These substances are composed of mixture of water-insoluble polysaccharides, glycoproteins, lipids, and fibrillary materials, which, when moistened, become sticky and help the pathogen adhere to the plant. In some fungi as powdery mildew, adhesion is carried out by the release of cutinase enzyme from the spore, which makes the plant and spore areas of attachment more hydrophilic and cements the spore to the plant surface [22].
\nSpore germination process initiates by growth stimulation, which takes place with the availability of proper environmental conditions. Once the stimulation has been received, the spore starts to utilize the stored food, such as lipids, polyoles, and carbohydrates to build germ tube as abridge with cell membrane and cell wall of the plant. When appropriate physical and chemical signals, such as surface hardness, hydrophobicity, surface topography, and plant signals, are present, germ tube extension and differentiation take place [23].
\nAppressorium is a specialized cell typical to many fungal plant pathogens that is used to infect the plant host. Once appressoria are formed, they adhere tightly to the leaf surface and then penetrate the plant cell wall via lysozyme secretion [24].
\nWhen a pathogen comes in contact with a host cell, the plant triggers a signal that either allows or retards the pathogen growth and development of disease. This signal is a biochemical reaction, which acts as a receptor to a pathogen contact. The pathogen propagation depends on the components of the plant cell, such as fatty acids galacturonan, phenolic compounds, strigol, amino acids, and sugars [25].
\nThe availability and ability of host infection are increased by vegetative pathogen. The infection by fungal spores or parasitic higher plant seeds is carried out after germination has achieved. Fungal spores\' germination is carried out by releasing either a mycelium or a germ tube that grows into the plant cell and cause infection [25].
\nThe growth of nematodes starts with hatching of eggs, which essentially requires convenient environmental conditions such as temperature and moisture. After hatching of the eggs, the larvae penetrate the plant cell and grow to form the adults. After maturation, the adults of nematodes closely adhere with plant roots due to some factors, such as carbon dioxide and amino acids [9].
\nPhytopathogens penetrate plant surfaces either through natural openings such as fungi and nematodes or through wounds in cell wall such as bacteria, viruses, viroids, mollicutes, fastidious bacteria, and protozoa. Penetration and infection are not usually correlated together, because some penetrated plants are resistant to phytopathogens [26].
\nThe intimate contact of phytopathogen with its host is called infection process. The infection process is either successful or unsuccessful depending on the type of host, whether susceptible or resistant, respectively. Successful infection results in the appearance of symptoms, such as discoloration, necrosis, dwarfism, and so on of the host. While unsuccessful (latent) infection does not lead to any observations for the symptoms. As well known, the symptoms start to appear after the incubation period of the pathogen has been finished. The symptoms either are stable or may be changed until death [27].
\nThe phytopathogens can invade the plant tissues by producing mycelia which grow between the cuticle and epidermis, such as pathogenic fungi of an apple. Nevertheless, other phytopathogens such as those causing powdery mildews produce mycelia which grow on the plant surface, and then extend to form a structure called haustoria, which in turn extend into the epidermal cells. Therefore, plant pathogenic fungi can invade their host either by intracellular mycelia, which directly grow through the cells, or by intercellular mycelia, which grow between the cells. On the other hand, plant pathogenic bacteria invade the plant tissues via intercellular way, and cause vascular wilts. Although nematodes can invade the plant tissues intercellulary or intracellularly, they usually feed on the epidermal cells by piercing. Other phytopathogens such as viruses, viroids, mollicutes, fastidious bacteria, and protozoa can intracellularly invade the plant tissues [28].
\nMost phytopathogens especially fungi and parasitic higher plants invade and infect plant tissues through the point of inoculation. Therefore, these pathogens can easily grow and spread within the plant tissues until a certain limit or death occurs. For example, fungi can invade and infect the plant tissue to cause vascular wilts. This invasion is carried out by releasing spores within the vessels [29].
\nOlive oil is one of a great interest in the vegetable oils world market. It is produced from the fruit of olive (

Olive oil is made from fresh olives, which are extracted by mechanical processes [3]. Olive oil extraction technologies are summarized in Figure 2. There are two main olive oil extraction processes: traditional oil mills, and a relatively new extraction process known also by continuous mills and characterized by two or three phases [4, 5] Figure 2. All the above processes aim at separating the liquid oil phase from the other constituents of the fruit [6]. Likewise, olives should be processed as rapidly as possible after harvesting to reduce oxidation and preserve their quality [7].

Concerning the traditional press method, olive fruits liberated from leaves are washed, crushed using mill stones, and malaxed into a paste containing solid matter (core debris, epidermis, cell walls, etc.) and fluids (oil and vegetation water contained in the cells of olives). This is then spread on spherical mats [6]. Pressure with a hydraulic piston press is exerted then to obtain, firstly, a solid fraction (known as pomace) and, secondly, the mixture of oil and water is filled into a container and, eventually, the oil and water are then separated by gravity and collected through decantation [5]. The pressing process is the oldest method of obtaining olive oil [8]. Owing to lower production efficiency and high labor costs, during the last decade, the discontinuous pressing systems have widely been substituted by continuous systems, along with the development of centrifuge technology [4, 9]. After the steps of washing, crushing, and mixing, the mechanical extraction of the oil occurs mainly by a continuous process based on centrifugation using a decanter. The decanter centrifuge is equipped with a rotary bowl as well as a screw conveyor, which allows the processing of great quantities of olives in a short time [7]. Continuous separation systems can be divided into two-phase and three-phase systems, based on the decanter type used and the level of the phase of separation [9]. In the three-phase process, an additional amount of hot water is added to wash the oil, and then the three-phase decanter (insoluble solids, oil phase, and an aqueous phase), are separated following their density [7, 10]. Firstly, the solid wastes (insoluble solids), are separated from the remaining two phases in the decanter, and the liquid phases (oil phase as well as aqueous phase), are then subjected to vertical centrifugation to separate the olive oil from the olive mill wastewater [7].
Owing to the significant issue of wastewater produced, this three-phase system is preferred over the two-phase system since it is more eco-friendly [11]. This latest uses only a semi-liquid slurry (vegetation water along with insoluble solids) phase and the oil phase, a semi-liquid slurry, which is also known as two-phase olive mill waste [7]. This process has a reduced environmental impact owing to the reduced requirement of water as well as the amount of waste produced [7].
Olive oil glyceridic fraction consists of triacylglycerols, diacylglycerols, monoacylglycerols and free fatty acids (FFA). Among them, 80% of them are unsaturated fatty acids. It is particularly rich in essential monounsaturated fatty acids (55–83% of oleic acid) and polyunsaturated fatty acids (2.5–21% of linoleic acid) [12]. The remaining fatty acids, apart from C16: 1, display an average value ranging from 0.3 to 3.5% (Table 1 and Figure 3). Nevertheless, linolenic acid is a minority and its concentration is lower than 1% [12]. A low level of linolenic acid can be used to detect adulteration via some vegetable oils such as rapeseed and soybean oils [13]. Small quantities of saturated fatty acids also compose the triglycerides of olive oil: stearic acid (about 0.5–5%) and palmitic acid (about 7.5–20%). The remaining fatty acids (C17: 0, C17: 1, C20: 0, C20: 1, and C22: 0) are found to be of lower magnitudes. Since their concentrations are below 0.5% (Table 1). The unsaponified matter (about 1–2%) contains sterols, triterpene alcohols, tocopherol (mainly α-tocopherol), tocotrienol polyphenols, and squalene. The oil also contains a non-negligible proportion of volatile compounds. The total phytosterols content of VOO ranges between 100 and 200 mg/100 g. Also, 100 mg/100 g represents the inferior limit set by the international olive council [12]. Apparent beta-sitosterol, (beta-sitosterol + delta-5-avenasterol + delta-5-23-stigmastadienol + clerosterol + sitostanol + delta 5–24-stigmastadienol) are the main compounds in the sterol fraction with a value more than 93% while β-sitosterol has the greatest relative percentage [14, 15] (Figure 4). VOO content also includes up to 4.5 g/100 g of total phytosterols [12]. The erythrodiol (5α-olean-12-ene-3β, 28-diol, homo-olestranol) in free and esterified forms and are the major triterpene di-alcohols found in olive oil [14], and their percentage reached up to 4.5% of the total content of sterols [12]. Moreover, four isoforms of tocopherols (α, β, γ, and δ-tocopherol) (Figure 5) and four tocotrienols (α, β, γ and δ- Tocotrienol) are present in olive oil. α-tocopherol is the main tocopherol found in olive oil, constituting more than 90% of the total tocopherol fraction [14]. Cunha et al. [16] reported that the proportions of tocopherols and tocotrienols ranged from 100 to 270 mg/kg in Portuguese olive oils [16]. Gharby et al. [47] found that the values of tocopherols varied from 150 to 250 mg/kg in three varieties (‘Arbequina’, ‘Moroccan Picholine’, and ‘Picual’) of olive oil [17]. Moreover, another study, based on the comparison of the tocopherol contents of olive oils from 4 different varieties harvested at different ripening periods found that the α-tocopherol (major tocopherol) in oils obtained from olives composed of 130.54–180.43 mg/kg [18]. In general, tocopherol and tocotrienol levels in oil fluctuate with several factors such as harvest year, climatic conditions, storage time, extraction method, soil properties and spacing between olive trees [19]. Tocopherols possess a strong antioxidant power [20]. Together with tocopherols and tocotrienols, olive oil contains other antioxidant molecules such as polyphenolic compounds.

Many research works have demonstrated that the content of tocopherols in VOO is lower than that of argan oil [21, 22, 23].
The phenolic compounds are endowed to have a large scale of biological functions including stability to auto-oxidation, beneficial effects on human health [24]. About their well-known activities, olive oil polyphenols have been proven to possess an effective role in maintaining the organoleptic properties and the stability of olive oils [25].
Such bioactive compounds are extensively studied for their anti-inflammatory, antioxidant, neuroprotective, cardioprotective, antidiabetic, antimicrobial, and anticancer properties [26, 27, 28, 29].
Franco et al. reported that phenolic compounds have a considerable increase during olive fruit growth. However, they are reduced when the fruits reach the maturation stage [30]. Khalatbary documented that the total phenolic content (TPC) in olive oils varies from 190 to 500 mg/kg [31]. In addition, in extra virgin olive oil, TPC commonly varies from 250 to 925 mg/kg [32]. Other factors including climatic conditions, variety, storage time, extraction conditions, soil properties, and analysis of polyphenolic compounds can lead to important variations in TPC [33]. Likewise, several classes of polyphenols are found in olive oils. These are presented as a separate class, to better understand the antioxidant phenolic chemistry of olive oil [33]. Finicelli et al. classify olive oil polyphenols following their chemical structure as follows [34]:
Phenolic alcohols with a hydroxyl group are linked to an aromatic hydrocarbon group. The main constituents of this class are oleocanthal, hydroxytyrosol, and tyrosol (Figure 6) [26].
Secoiridoids are phenolic compounds present in high amounts in olive oil in comparison to other plant species. The bitterness of extra virgin olive oil is a result of the content of secoiridoids [35].
Lignans are chemically characterized by the aggregation of aromatic aldehydes. The pulp of the olives as well as the woody part of the seed contains lignans. These molecules are liberated into the oil during the process of extraction without biochemical changes [36].
Flavonoids are chemically structured with two benzene rings attached via three linear carbon chains. The first flavonoids identified in VOO were flavones; their free forms, apigenin, and luteolin. They are the more abundant compounds [36].
Hydroxyisocromans are the only two molecules characterized in commercial VOO. These compounds are produced via the HydroxyTyrosol reaction with benzaldehyde and vanillin [37].
Phenolic acids are divided into two main classes: hydroxycinnamic acid along hydroxybenzoic acid [26].

The volatile fraction of VOOs has been reported to have about 280 different compounds [38]. The majority of volatile compounds are quickly developed during olive milling as a result of the disturbance of olive cells [39]. Although, Nardella et al. reported that most of the volatile compounds typical of olive oils are generated during malaxation due to the activation of particular pathways, in which the lipoxygenase (LOX) enzyme plays an essential role in producing a large quantity of C6 aldehydes, esters, and alcohols. These constitute almost all of the positive sensory marks in olive oils [40]. Such changes are initiated when olive tissues are affected, thereby enhancing the liberation of endogenous enzymes like hydroperoxide lyase and lipoxygenase [40].
Besides, several analytical techniques have been used to determine volatiles composition in olive oil. The main important are: GC (gas chromatography), HPLC (high-performance liquid chromatography), HPLC/MS (high-performance liquid chromatography/mass spectroscopy), IRMS (isotope ratio mass spectroscopy), ICP (inductively coupled plasma spectroscopy), NMR (nuclear magnetic resonance), SPME-GC/MS (solid-phase microextraction followed by gas chromatography/mass spectrometry, SNIF/NMR (specific natural isotopic fractionation nuclear magnetic resonance), SCIRA (stable carbon isotope ratio analysis), PTR/MS (proton transfer mass spectrometry) [41]. Fregapane et al. reported that the composition of volatiles may be affected significantly according to many factors such as cropping season, olive variety, harvest time, technological parameters, and agronomic conditions among other factors [42]. Ghanbari et al. reported that several chemical factors such as hydrophobicity, volatility, position, and functional groups type are reported to be directly linked to the odor degree of a given volatile component more than its content [38]. Theodosi et al. investigated correlations between the composition of volatiles of olive oil and altitude variation. The findings demonstrate that the total volatile compounds of ‘Koroneiki’ olive oil samples and altitude levels are negatively associated. The most important volatile compounds are alcohols, aldehydes, esters, and hydrocarbons [43].
Parameters routinely used to evaluate physicochemical properties of olive oil include density, iodine value, refractive index, saponification value along with unsaponifiable matter. For vegetable oils including olive oil, both density and refraction index depend on the temperature [44]. Table 1 shows the ranges of the main physicochemical parameters of olive oil. The refractive index at 20°C varies in the range 1.463–1.472. At this same temperature, its density relative to water is between 0.906 and 0.919 [12]. The iodine value is a measure of the total number of double bonds found in an oil sample [1]. Olive oil displays an iodine value between 75 and 94 mg/100 g [17] (Table 1). This value is lower than that of argan oil (91–110 g I2/100 g), and cactus seed oil (131.5 ± 0.5 g (I2)/100 g) but higher than that of coconut oil (6.3–10.6 g (I2)/100 g) [13]. High iodine value is associated with the greater number of double bonds and reduced oxidative stability [45]. The saponification value is a measure of the average chain lengths of fatty acids. An oil sample with shorter fatty acids has a high saponification value. Moreover, according to CODEX STAN 33, the saponification value of olive oil varies between 184 and 196 mg (KOH)/g.
Olive oil is subject to enormous analytical and sensory controls to assess its overall quality. These analyses evaluate the freshness of the oil regarding hydrolytic and oxidative alterations to ensure the conformity of products to their labels. For example, extra VOO by simple routine analyses (free fatty acids, peroxide value, specific extinction (E270 along with E232) and/or purity blending with other oils and contaminants. These criteria require detailed analyses (triglycerides contents, fatty acids, sterols, tocopherols, etc. …). Organoleptic characteristics (taste, odor, color, etc. …) also have to be taken into account.
As for other vegetable oils, the olive oil oxidation leads to natural phenomena alteration [46, 47]. This can be controlled since fruit harvest until oil storage. Because of oxidation, physicochemical parameters such as acidity, peroxide value and extinction specific at wavelength 270 (λ270 or λ270) have been selected as the backbone of olive oil quality determination by the International Olive Council [12]. Also, acidity of olive oil is classified into four grades: extra-virgin (Acidity < 0.8 g/100 g), fine-virgin (0.8 < Acidity < 2 g/100 g), ordinary virgin (2 < acidity < 3.3 g/100 g), and lampante olive oil (Acidity > 3.3) (Table 2) [12].

The variability of the extra VOO, acid value according to various parameters has been studied [47]. Oil oxidative state is examined from peroxide value and specific extinction coefficients (K232 or K270). These indicate the presence of primary and secondary oxidation products [1, 48]. The peroxide value of extra VOO oil must be below 20 mEq O2/kg and specific extinction K232 < 2.5. The other two main indices used to evaluate the secondary oxidation products are the following: p-anisidine value and specific extinction K270 [1, 49]. The International Olive Council (IOC) has set 0.22 and 0.25 as a limit value for both the extra VOO and VOO, respectively [12].
Furthermore, along with oxidation and acidity concerns, the quantification of major compounds such as fatty acids (Figure 3), and minor compounds, like sterols (Figure 4), polyphenols, tocopherols, minerals elements, and other bioactive molecules, are also of great importance for the purity and for detection of olive oil adulteration, which is a complex problem. Owing to its high cost and demand, fraudsters blend VOO with cheaper edible oils (most often with sunflower and soybean oils) and sometimes with low-quality olive oil. Today, the problem exceeds the borders of the main producer countries and it tackles the international level market. In addition to known risks of commercializing a mixture of vegetable oils. There is another type of adulteration resulting from the mixing of relatively low and high-quality olive oil, and the outcome is a product, which is sold as “high quality extra VOO”. The control of adulteration, and authentication is of a crucial importance for the olive oil quality control. Codex Alimentarius (fats and oils), International Olive Council, and European Union Commission are dealing with the monitoring along with the regulation of VOO [50]. These international organizations have described the official control methods and have specified olive oil quality limits. Generally, all analytical techniques (chromatography, spectrophotometry, voltametric, differential scanning calorimetry), as well as several analytical methods, have been used to detect the adulteration of olive oil. Gas chromatography (GC), which analyzes oil fatty acids profile, can be used to detect virgin oil purity by distinguishing it from other vegetable oils such as sunflower, soybean, walnut, rapeseed, and canola oils [51]. Moreover, HPLC-technique can be used, to calculate, the difference between the theoretical and experimental equivalent carbon number (ΔECN42th). Likewise, the determination of phytosterols composition (namely campesterol Δ7-stigmasterol) using gas chromatography can be used to detect olive oil adulteration with low levels of cotton, corn, sunflower, soybean, and rapeseed oils [51]. In addition, Vietina et al. reported that the polymerase chain reaction (PCR) technique was demonstrated to be an efficient technique to detect VOO adulteration with cheaper vegetable oils by comparing their DNA melting profiles [52]. MS has also been used to detect the fraudulent presence of vegetable oils. Also, a lot of different techniques involving MS have been significantly developed, such as LC–MS, GC–MS, and MALDI-TOF/MS, which are of highly accurate identification [51]. Indeed, many other studies have also outlined the application of fluorescence spectroscopy, UV–Vis spectroscopy, [50] Fourier transform infrared spectroscopy [53] mid-infrared (MID) or near-infrared spectroscopy (NIR) [54] and Raman spectroscopy [55] for authentication and detection of adulteration of vegetables oil present in VOO [50]. Otherwise, differential scanning calorimetry (DSC) has also been used to detect argan oil purity by discriminating it from sunflower, high oleic sunflower as well as refined hazelnut oil [50]. Apetrei and Apetrei have investigated the use of the voltametric method based on modified EO carbon paste-based sensors to determine the adulteration of VOO with soybean and sunflower oils [56].
On the other hand, identification of contaminants is one of the multiple checks that must be performed on oils. Vegetable oils have limited values for aromatic hydrocarbons polycyclics (PAHs), heavy metals, mycotoxins, phthalates, and pesticides. Although, the physicochemical characterization of olive oil is an essential step, it is not sufficient and organoleptic characteristics along with the above-mentioned supplementary analyses are required for a full picture of olive oil quality [1].
To satisfy consumers, organoleptic characteristics (color, taste, smell, etc.) must be taken into account. This is particularly important for olive oil. The organoleptic analysis is an essential step for successful food marketing. It is an integral part of evaluating olive oil. IOC has established a procedure to evaluate the organoleptic characteristics of VOO according to COI/T.20/Doc. [12] No 15/Rev. 102,018. It has classified such characteristics into positive and negative attributes as highlighted in Tables 2 and 3.

Organoleptic attributes of olive oil.
Oxidation of lipids including oils is a major concern to food industries [57, 58]. While, vegetable oils are endowed with a wide variety of endogenous antioxidants (pigments, vitamins, tocols, phenols, etc.), the use of exogenous antioxidants is widely practiced to enhance oxidative stability. In this regard, synthetic antioxidants such as butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT), tertiary butylhydroquinone (TBHQ), as well propyl gallate are commercially used to extend oils’ shelf life by delaying or even hindering lipids degradation. These molecules are considered as Generally Recognized as Safe (GRAS) preservatives with a concentration limit of 0.02% in oils and fats [59]. In contrast, some reports associated these molecules with health risks because of carcinogenesis, leading to a restriction of the use of the GRAS list and a reduction of their utilization in different countries [59]. For this reason, natural antioxidants are a good alternative to replace the synthetic ones in preserving vegetable oils including olive oil [59, 60, 61]. An overview of factors involved in the balance of antioxidants and pro-oxidants as well as synthetic and natural antioxidants are summarized in Figure 7.

Natural extracts sourced from various plant parts (peel, fruit, leaf, flower, and root) from different aromatic and medicinal herbs, agri-food residues and by-products were investigated for their antioxidant power as well as their use for the enrichment of olive oil with an emphasis on improving oxidative stability. Such natural extracts were proved to have a wide range of bioactive compounds were identified. These are mainly carotenoids and phenols [62, 63]. Promising results were obtained regarding the improvement of oxidative stability and shelf life of olive oil. Regarding the antioxidant activity of synthetic and natural additives, several mechanisms are involved. They act as free radical scavengers, inactivators of peroxides as well as other reactive oxygen species (ROS), singlet oxygen quenchers, metal ion chelators, quenchers of secondary oxidation products, and inhibitors of pro-oxidative enzymes, among other compounds [64]. Following these authors, antioxidants can be classified, based on their mode of action, into primary antioxidants. These break the oxidation chain reaction through scavenging free radical intermediates, however secondary antioxidants delay or even prevent oxidation through suppression of oxidation initiator, accelerators or regeneration of primary antioxidants.
Olive oil is an important food in the Mediterranean diet. Its importance and nutritional value arise from chemical composition. Its richness in essential fatty acids is behind their health-promoting properties. A set of other minor compounds such as polyphenols and tocopherols act as antioxidants which are directly associated with oxidative stability and shelf life of olive oil on one hand as well as human health on the other hand. Along with these endogenous antioxidants, olive oil quality can be enhanced through natural antioxidants extracted from herbs and agri-food residues.

The principles underlying RF‐magnetron sputtering used to prepare calcium phosphate‐based, mainly hydroxyapatite coatings, are discussed in this chapter. The fundamental characteristic of the RF‐magnetron sputtering is an energy input into the growing film. In order to tailor the film properties, one has to adjust the energy input into the substrate depending on the desired film properties. Their work provided the base for the development of semiconductor photocatalysis for the environmental remediation and energy applications. Photoactivity of some semiconductors was found to be low due to larger band gap energy and higher electron-hole pair recombination rate. To avoid these problems, the development of visible light responsive photocatalytic materials by different approaches, such as metal and/or non-metal doping, co-doping, coupling of semiconductors, composites and heterojunctions materials synthesis has been widely investigated and explored in systematic manner. This chapter emphasizes on the different type of tailored photocatalyst materials having the enhanced visible light absorption properties, lower band gap energy and recombination rate of electron-hole pairs and production of reactive radical species. Visible light active semiconductors for the environmental remediation purposes, particularly for water treatment and disinfection are also discussed in detail. Due to the participation of charge transfer reactions, the capacitance offered by transition metal oxide can be higher compared to double layer capacitance. The investigation on hydrous ruthenium oxide has revealed the surface redox reactions that contributed to the wide potential window shown on cyclic voltammetry curve. Although the performance of ruthenium oxide is impressive, its toxicity has limited itself from commercial application. Manganese oxide is a pseudocapacitive material behaves similar to ruthenium oxide. It consists of various oxidation states which allow the occurrence of redox reactions. It is also environmental friendly, low cost, and natural abundant. The charge storage of manganese oxide film takes into account of the redox reactions between Mn3+ and Mn4+ and can be accounted to two mechanisms. The first one involves the intercalation/deintercalation of electrolyte ions and/or protons upon reduction/oxidation processes. This chapter will deal with TCAD device modelling of wide bandgap power semiconductors. In particular, modelling and simulating 3C- and 4H-Silicon Carbide (SiC), Gallium Nitride (GaN) and Diamond devices are examined. The challenges associated with modelling the material and device physics are analyzed in detail. It also includes convergence issues and accuracy of predicted performance.
