Dr. Leticia Rao is an Emerita Associate Professor of Medicine and former Director of the Calcium Research Laboratory, Department of Medicine, and St Michael’s Hospital, Toronto, Ontario. Her degrees include a BSc Chemistry, University of the Philippines; MSc Food Science, Oregon State University; and Ph.D. Biochemistry, University of Toronto. She has studied the effect of gravity on bone formation in osteoblast cells in an experiment sent to space with the Space Shuttle Columbia STS 107.

About the book

Several factors including genetics, environment, physical activity and diet, play an important role in our health. There is convincing scientific evidence to suggest that the type of diet that we choose is one of the most important factor that influences health outcome. Expert opinion strongly suggests that maintaining an ideal body weight is extremely important in maintaining food health. Sedentary life style and improper diet will result in obesity and related diseases including cardiovascular diseases, cancer, diabetes just to name a few. Nutritionists and other health professionals have recommended what a good diet is and government agencies have come up with guidelines as to food consumption patterns that are consistent with good health. In spite of these guidelines, obesity has become one of the main public health concerns. To address this problem, several diets have now been proposed and marketed. Each of the recommended diet has its own justification and rationale.

The latest diet for weight management which is stimulating great deal of interest is the "Ketogenic Diet". It is also referred to as "Low Carb" diet. Although several public interest and scientific articles have been published over the past few years, there is a lack of book that can address this diet in depth in a systematic way to better understand the justification and implications of following this diet.

Approved chapters written in full and submitted

Deadline for full chapters: December 28th 2020

Once approved by the academic editor and publishing review team, chapters are written and submitted according to pre-agreed parameters

Full chapters peer reviewed

Review results due: March 18th 2021

Full chapter manuscripts are screened for plagiarism and undergo a Main Editor Peer Review. Results are sent to authors within 30 days of submission, with suggestions for rounds of revisions.

Book compiled, published and promoted

Expected publication date: May 17th 2021

All chapters are copy-checked and typesetted before being published. IntechOpen regularly submits its books to major databases for evaluation and coverage, including the Clarivate Analytics Book Citation Index in the Web of ScienceTM Core Collection. Other discipline-specific databases are also targeted, such as Web of Science's BIOSIS Previews.

Dr. Venketeshwer Rao, Professor Emeritus, Department of Nutritional Sciences, Faculty of Medicine, University of Toronto, has established a major focus in the area of diet and health. His research focuses on the role of phytochemicals in the prevention and management of human diseases including cancer, cardiovascular disease, and osteoporosis. The main area of his research is oxidative stress and antioxidant phytochemicals with particular emphasis on the role of lycopene. He is credited for bringing international awareness to the role of lycopene in human health. In addition to carotenoids, his research interests also include plant polyphenols and the role of prebiotics and probiotics in human health. He has published extensively including research papers, reviews, and books. He has a distinguished academic career spanning over 52 years. He is popularly sought by the international media to express his opinions on the subjects of nutrition and health.

As an Author Service Manager, my responsibilities include monitoring and facilitating all publishing activities for authors and editors.
