Currently, 1178 natural carotenoids have been properly characterized and reported in the literature and they present a huge structural diversity and physicochemical properties. This number includes a wide distribution of these biomolecules in approximately 700 source organisms including plants, bacteria, fungi, and algae.The book "Carotenes and Xanthophylls: Recent Trends in Occurrence, Properties, and Determination" will provide the most up-to-date research and development on Carotenoids. The book will show the current global perspective on occurrence, properties, and determination of carotenoids.
