About the book

Understanding the mechanisms involved in chemical interactions that occur in nature between plants and microorganisms, humans and other animals, is of great importance since products derived from plants can have several industrial applications, such as the food industry, pharmaceutical, and cosmetics. Plants of different species, genera, and families, can represent an important step for generating innovative technologies that meet the demands of modern society concerning the preservation of natural resources, the quality of food, and the very health of humans.
The knowledge of the production potential of innumerable chemical compounds produced by plants generates great expectations and concrete possibilities so that in the not too distant future, science can make available new technological processes compatible with the current needs. Among the numerous chemically diversified compounds, the most polar varieties that range from non-polar, encompassing hydrocarbons, such as polyphenols, found in the most different fractions such as essential oils, fixed oils, and extracts, all have a promising potential for treating different endemic diseases.

In this book, entitled: Essential Oils - Advances in Extractions and Biological Applications, experimental study, or in-silicon study, we will try to address the most varied possibilities of using natural products to control diseases, as well as applications. Priority will be given to secondary metabolites produced by plants, and especially essential oil. The focus will be on the issues related to the functions of natural products and their applications. We will also address the biosynthetic pathways of production by plants.

Overall, the book will provide its readers with a broad and diverse mirror of the importance that secondary metabolites produced by plants represent the safety of plants and the possibilities for innovative biotechnological approaches that will make all the difference to new potential industrial products.

Dr. Mozaniel Santana de Oliveira has a Master’s degree in Food Science and Technology and PhD also in Food Science and Technology from the Federal University of Pará, Brazil. He has more than 100 scientific contributions among articles in international journals, books, book chapters, and conference abstracts. He has experience in the following scientific areas: engineering, food science and technology, pharmacology and drug discovery, medicinal chemistry, ethnopharmacology and ethnobotany, phytochemistry, extraction methods of bioactive compounds, analytical chemistry, biotechnology of natural products, and allelopathy. Dr Oliveira is currently a researcher in the Institutional Training Program at the Museu Paraense Emílio Goeld, Pará, Brazil.
