About the book

This book is a compilation of studies conducted to understand the potential effect of fructans. From the molecular structure, the synthesis and the different sources of fructans, this book aims to publicize new results around fructans.

The health effects of fructans are well known and diverse. Fructans have been applied in various food products and new applications have recently been described. Fructans act as prebiotics by stimulating the intestinal microbiota, favoring the production of short chain fatty acids (SCFAs). SCFAs exert local and systemic responses that influence the metabolism and physiology of other organs such as liver, muscle and brain. In this regard, we are interested in studies of fructans with involvement in neurological pathologies such as autism and in metabolic diseases such as obesity, diabetes and cancer.

Likewise, we are interested in focusing on the results of the mechanisms of interaction with living organisms and the effects on animal models. Very importantly, we are interested in capturing clinical trials that reveal the potential and beneficial effects on human patients.

Approved chapters written in full and submitted

Once approved by the academic editor and publishing review team, chapters are written and submitted according to pre-agreed parameters

Full chapters peer reviewed

Review results due: March 18th 2020

Full chapter manuscripts are screened for plagiarism and undergo a Main Editor Peer Review. Results are sent to authors within 30 days of submission, with suggestions for rounds of revisions.

Book compiled, published and promoted

Expected publication date: May 17th 2020

All chapters are copy-checked and typesetted before being published. IntechOpen regularly submits its books to major databases for evaluation and coverage, including the Clarivate Analytics Book Citation Index in the Web of ScienceTM Core Collection. Other discipline-specific databases are also targeted, such as Web of Science's BIOSIS Previews.

Dr. Elena Franco Robles graduated from Faculty of Chemistry, Universidad de Guanajuato, México, in 2006. She obtained her M.S. degree in Medical Science from the same University in 2010. She obtained her Ph.D from the same University. She obtained a Posdoctoral Position in Biotechnology at the Center for Research and Advanced Studies of the National Polytechnic Institute (in 2014-2016). Currently, Elena is an Associate Professor in the Department of Veterinary, Division of Life Sciences, Irapuato-Salamanca Campus, University of Guanajuato, Mexico, and is member of the National System of Investigators (SNI I). Dr Franco Robles has done research mainly in immunology of the intestine and oxidative stress in murine models with various pathologies. Her research focused on the role of nutraceutical and functional ingredients as immunomodulators for the prevention and / or treatment of diseases in animals. In addition, she has studied toll-like receptors and gut microbiota as new therapeutic targets in zoonotic infections.

As an Author Service Manager my responsibilities include monitoring and facilitating all publishing activities for authors and editors. From chapter submission and review, to approval and revision, copyediting and design, until final publication, I work closely with authors and editors to ensure a simple and easy publishing process. I maintain constant and effective communication with authors, editors and reviewers, which allows for a level of personal support that enables contributors to fully commit and concentrate on the chapters they are writing, editing, or reviewing. I assist authors in the preparation of their full chapter submissions and track important deadlines and ensure they are met. I help to coordinate internal processes such as linguistic review, and monitor the technical aspects of the process. As an ASM I am also involved in the acquisition of editors. Whether that be identifying an exceptional author and proposing an editorship collaboration, or contacting researchers who would like the opportunity to work with IntechOpen, I establish and help manage author and editor acquisition and contact.
