About the book
This book is a compilation of studies conducted to understand the potential effect of fructans. From the molecular structure, the synthesis and the different sources of fructans, this book aims to publicize new results around fructans.
The health effects of fructans are well known and diverse. Fructans have been applied in various food products and new applications have recently been described. Fructans act as prebiotics by stimulating the intestinal microbiota, favoring the production of short chain fatty acids (SCFAs). SCFAs exert local and systemic responses that influence the metabolism and physiology of other organs such as liver, muscle and brain. In this regard, we are interested in studies of fructans with involvement in neurological pathologies such as autism and in metabolic diseases such as obesity, diabetes and cancer.
Likewise, we are interested in focusing on the results of the mechanisms of interaction with living organisms and the effects on animal models. Very importantly, we are interested in capturing clinical trials that reveal the potential and beneficial effects on human patients.
