Petr Konvalina

Dr. Petr Konvalina is the vice-dean for external relations at the Faculty of Agriculture, University of South Bohemia in České Budějovice, Czech Republic. He is an Associate professor in plant production. He is oriented towards organic plant production, wheat growing, organic plant breeding and organic food processing. On these topics he has published more than 100 reviewed scientific papers. The papers are mostly focused on the possibilities of practical use of genetic resources of wheat (emmer, einkorn, spelt) in organic farming. Dr. Konvalina has been involved in many national and international research and educational projects related to organic plant production.

Alternative crops and cropping systems have importance in whole agricultural sector. As the name suggests, it is an alternative that can currently represent only a small economic importance. On the other hand, in some areas pose a new progressive direction, which has the potential to expand in the future. The goal was to write a book where as many different existing studies as possible could be presented in a single volume, making it easy for the reader to compare methods, results and conclusions. As a result, studies from countries such as South Africa, Zimbabwe, Poland, The Czech Republic, Mexico and Japan have been compiled into one book. I believe that the opportunity to compare results and conclusions from different countries and continents will create a new perspective in alternative crops and cropping systems. I hope that our book will help researchers and students all over the world to attain new and interesting results in the field of alternative crops and cropping systems.

Rheological and Technological Quality of Minor Wheat Species and Common Wheat

Wheat is an important food grain source that nurtures millions of people around the world. Not only does wheat contain a large number of nutrients such as protein, wet gluten, etc., but also it has a lot of antioxidants such as dietary fibre, tocopherols, tocotrienols, etc. In a majority of cases, attention has been drawn to evaluate the grain yield and its components rather than its quality. The present investigation was carried out to evaluate the differences between minority wheat species and common wheat to determine the best rheological characteristics, technological quality as well as correlations between rheological and technological traits. The results revealed that hulled wheat species had a high protein content and wet gluten content. Einkorn and emmer were not suitable for ‘classical’ baking processing. But there is potential for other products, e.g. wheat rice (einkorn) or pasta (emmer). Spelt should be possible to be used in ‘classical’ baking industry, but the best solution is to use grain as a mixture with bread wheat. Also, this study showed a genotype variation in the antioxidant activity of einkorn, emmer, spelta and Triticum aestivum.
