Poliana Mendes de Souza is a professor and researcher at the Science and Technology Institut, of the Federal University of Jequitinhonha and Mucuri Valley. She obtained her PhD in 2012 in the field of Food Technology at UPV (Spain), with a sandwich period at the MRI (Germany). Dr. Souza has a Master's in Food Engineering (UNICAMP, 2007, Brazil), and a Bachelor's in Food Engineering (PUCPR, 2006, Brazil), both with a period of training at LaSalle Beauvais (France). Currently, she is vice-coordinator of the Master Program in Nutrition Science of UFVJM, and organize multiple online congress (TECALI, CoBICET, WENDEQ). Earlier she acted as Coordinator of International Relations (2021-2022), Director of Planning (2017-2019), Coordinator of the Master Program in Food Science and Technology (2016-2017), and Vice-Coordinator of Food Engineering (2014-2016). She was responsible for the creation and implementation of the Master Program in Food Science and Technology and UFVJM, and also for the BRANETEC program. She is the author of numerous papers, book chapters, and congress publications; and she advised more than 10 master dissertations and more than 20 graduation works. Her research focused on the impact of emerging technologies on food conservation and quality, with dismemberment for inactivation modelling, and product development.
