Carlos Manuel Franco is a Full Professor at the University of Santiago de Compostela, in the Department of Analytical Chemistry, Nutrition and Bromatology. He obtained a Ph.D. in nutrition and bromatology from the same university in 1994. He is the author of more than 120 international publications in scientific journals and several book chapters. He is currently a member of the scientific committee of the Spanish Security Agency Food and Nutrition (AESAN). He is the editor-in-chief and an editorial board member of diverse food science and microbiology journals. His research is focused on new methods of food control, the detection of pathogenic bacteria in food and other matrices, and the effect of various substances on pathogenic bacteria.
