He is full professor of the Analytical Chemistry, Nutrition and Bromatology department of the Universidade de Santiago de Compostela. He got his PhD in 1994 in the area of Nutrition and Bromatology at the University of Santiago of Compostela (USC). He has participated in more than 10 international, national and regional projects o. He has directed 14 doctoral theses a. He is the author of more than 100 international publications in scientific journals indexed by Thomson (Clarivate Analytics), several book chapters (ELSEVIER, Intechopen). He is currently a member of the scientific committee of the Spanish Security Agency Food and Nutrition (AESAN). He is editor of some international peer review journals as Food Control, Antibiotics, Food and Bioprocess Technology, Current Pharmaceutical Biotechnology. His research is focused in the detection of pathogenic bacteria in food and other matrices and the effect of various substances on pathogenic bacteria as well as the detection of the use of non in animal production by direct methods such as the detection of such substances in feed, meat, additives etc. by various chromatographic techniques or also by indirect methods using transcriptomics. Also controls of genetic traceability in meat.
