IntechOpen was founded by scientists, for scientists, in order to make book publishing accessible around the globe. Over the last two decades, this has driven Open Access (OA) book publishing whilst levelling the playing field for global academics. Through our innovative publishing model and the support of the research community, we have now published over 5,700 Open Access books and are visited online by over three million academics every month. These researchers are increasingly working in broad technology-based subjects, driving multidisciplinary academic endeavours into human health, environment, and technology.
\\n\\nBy listening to our community, and in order to serve these rapidly growing areas which lie at the core of IntechOpen's expertise, we are launching a portfolio of Open Science journals:
\\n\\nAll three journals will publish under an Open Access model and embrace Open Science policies to help support the changing needs of academics in these fast-moving research areas. There will be direct links to preprint servers and data repositories, allowing full reproducibility and rapid dissemination of published papers to help accelerate the pace of research. Each journal has renowned Editors in Chief who will work alongside a global Editorial Board, delivering robust single-blind peer review. Supported by our internal editorial teams, this will ensure our authors will receive a quick, user-friendly, and personalised publishing experience.
\\n\\n"By launching our journals portfolio we are introducing new, dedicated homes for interdisciplinary technology-focused researchers to publish their work, whilst embracing Open Science and creating a unique global home for academics to disseminate their work. We are taking a leap toward Open Science continuing and expanding our fundamental commitment to openly sharing scientific research across the world, making it available for the benefit of all." Dr. Sara Uhac, IntechOpen CEO
\\n\\n"Our aim is to promote and create better science for a better world by increasing access to information and the latest scientific developments to all scientists, innovators, entrepreneurs and students and give them the opportunity to learn, observe and contribute to knowledge creation. Open Science promotes a swifter path from research to innovation to produce new products and services." Alex Lazinica, IntechOpen founder
\\n\\nIn conclusion, Natalia Reinic Babic, Head of Journal Publishing and Open Science at IntechOpen adds:
\\n\\n“On behalf of the journal team I’d like to thank all our Editors in Chief, Editorial Boards, internal supporting teams, and our scientific community for their continuous support in making this portfolio a reality - we couldn’t have done it without you! With your support in place, we are confident these journals will become as impactful and successful as our book publishing program and bring us closer to a more open (science) future.”
\\n\\nWe invite you to visit the journals homepage and learn more about the journal’s Editorial Boards, scope and vision as all three journals are now open for submissions.

Wherever we are, whatever we are doing, there are electronic devices that we rely indispensably on. While some of these technologies, such as those fueled with smart, autonomous systems, are seemingly precocious; others have existed for quite a while. These devices range from simple home appliances, entertainment media to complex aeronautical instruments. Clearly, the daily lives of mankind today are interwoven seamlessly with electronics. Surprising as it may seem, the cornerstone that empowers these electronic devices is nothing more than a mere diminutive semiconductor cube block. More colloquially referred to as the Very-Large-Scale-Integration (VLSI) chip or an integrated circuit (IC) chip or simply a microchip, this semiconductor cube block, approximately the size of a grain of rice, is composed of millions to billions of transistors. The transistors are interconnected in such a way that allows electrical circuitries for certain applications to be realized. Some of these chips serve specific permanent applications and are known as Application Specific Integrated Circuits (ASICS); while, others are computing processors which could be programmed for diverse applications. The computer processor, together with its supporting hardware and user interfaces, is known as an embedded system. In this book, a variety of topics related to microchips are extensively illustrated. The topics encompass the physics of the microchip device, as well as its design methods and applications.",isbn:"978-1-83968-461-6",printIsbn:"978-1-78985-930-0",pdfIsbn:"978-1-83968-462-3",doi:"10.5772/intechopen.83313",price:119,priceEur:129,priceUsd:155,slug:"integrated-circuits-microchips",numberOfPages:204,isOpenForSubmission:!1,isSalesforceBook:!1,isNomenclature:!1,hash:"3c7ff3f191842303cc95e466e28b5e33",bookSignature:"Kim Ho Yeap and Jonathan Javier Sayago Hoyos",publishedDate:"September 16th 2020",coverURL:"https://cdn.intechopen.com/books/images_new/9309.jpg",keywords:null,numberOfDownloads:6298,numberOfWosCitations:2,numberOfCrossrefCitations:2,numberOfDimensionsCitations:2,numberOfTotalCitations:6,isAvailableForWebshopOrdering:!0,dateEndFirstStepPublish:"December 2nd 2019",dateEndSecondStepPublish:"March 6th 2020",dateEndThirdStepPublish:"May 5th 2020",dateEndFourthStepPublish:"July 24th 2020",dateEndFifthStepPublish:"September 22nd 2020",dateConfirmationOfParticipation:null,remainingDaysToSecondStep:"2 years",secondStepPassed:!0,areRegistrationsClosed:!0,currentStepOfPublishingProcess:5,editedByType:"Edited by",kuFlag:!1,biosketch:null,coeditorOneBiosketch:null,coeditorTwoBiosketch:null,coeditorThreeBiosketch:null,coeditorFourBiosketch:null,coeditorFiveBiosketch:null,editors:[{id:"24699",title:"Dr.",name:"Kim Ho",middleName:null,surname:"Yeap",slug:"kim-ho-yeap",fullName:"Kim Ho Yeap",profilePictureURL:"https://mts.intechopen.com/storage/users/24699/images/system/24699.jpg",biography:"Kim Ho Yeap is an Associate Professor at Universiti Tunku Abdul Rahman, Malaysia. The increased interest in the study of endocrine disruptors and other emerging pollutants in aquatic matrices that is evidenced in different scientific publications [1] arises from the evidence of their presence in components such as wastewater and its association with problems and effects on ecosystems. This is also due to the high production and commercialization of chemical products in the world with different uses that cause them to be in important concentrations in all matrices, including water [2]. However, both the occurrence studies and the ecotoxicological and risk studies have not been conducted with the same frequency throughout the world, with large differences in the amount of research conducted in the United States and Europe relative to that in Latin America or elsewhere in the world [3].
\nAlthough there has been a significant increase in research in this field, there is still a marked difference between the quantity of substances produced and the capacity to monitor, control and understand the totality of the transformations and impacts on the ecosystems they generate. Research and policy tools are lacking in many contexts around the world [2, 4]. Research on ECs encompasses multiple concepts and definitions that are related, including the concepts of micropollutants, personal care products, pharmaceuticals, disinfection byproducts, and flame retardants, among others [5].
\nTo address the issue of endocrine disruptors, it is necessary to speak on emerging pollutants in the first instance, an EC or, preferably, a contaminant of emerging concern (CEC) is defined as any naturally occurring substance, chemical or artificial material that has been discovered or suspected to be present in various environmental compartments and whose toxicity or persistence is likely to significantly alter the metabolism of a living being [6]. The classification of ECs has also been the subject of discussion based on the aforementioned definitions; many of the so-called micro-contaminants are ECs, and even so-called nanoparticles are included. Some of the most widespread classifications include drugs, hormones, polymers, pesticides, stimulants, nanoparticles, and nanomaterials [7, 8, 9, 10].
\nEndocrine disruptors (EDs) chemicals are a category within ECs associated with the type of health risk, such as those that are capable of disrupting the normal functioning of the endocrine system, responsible for all hormonal physiology in living beings [11]. There has been considerable research on EDs around the world, predominantly in Europe and the United States [12, p. 37, 13, 14, 15, 16]. Studies have also been performed in Asia, specifically in China, where ED concentrations rarely exceed micrograms per liter [17, 18]. The risk and toxicity of the different ECs have been approached from different points of view, including controlled experimental trials, cohort studies, epidemiological studies of cases and controls, and ecotoxicological studies focusing on the chronic risk as EDs [19, 20]; one of the best known cases is that of bisphenol A, a recognized plasticizer of widespread use worldwide [21]. As part of what continues to be found regarding the level of the risk, contaminants appear on various lists around the world according to precautionary principle, and more than 56 were identified in a single sample of surface water [22]. One of the main sources of EDs in the aquatic environment is wastewater, where it is possible to find sufficient concentrations of these compounds to contaminate surface sources or subsequently contaminate soils or food when the compounds are used for irrigation [23]. This situation has even led water for human consumption exhibiting significant amounts of disruptors; according to a study by Plotan et al. [24], even in bottled and flavored water, it is possible to find concentrations of EDs such as β-estradiol (10 ng L−1), testosterone (26 ng L−1), progesterone (123 ng L−1), and hydrocortisone (13.5 ng L−1).
\nAnother aspect that has presented challenges in the monitoring of EDs is the diversity of compounds that can affect the endocrine system and the techniques for measuring them, which are increasingly sensitive and robust; Mol et al. [25] proposed as a technique for the quantification of EC gas chromatography-mass spectrometry, noting that this technique offers good results with respect to other methodologies used, such as supercritical fluid extraction, derived fluorescence followed by liquid-liquid microextraction, and other techniques of chromatography with mass spectrometry. This in turn has been proven to be a high precision technique with a sensitivity of 4–6 ng L−1, except for hormones, for which the precision is 50–300 ng L−1 [26].
\nAt the level of Colombia and specifically in the city of Bogotá, there have been no studies evaluating the occurrence of EDs in aquatic matrices or the associated ecosystem risk; thus, it is important to set a precedent taking into account the problems of domestic and industrial wastewater pollution in the primary cities around the country [27]. The city of Bogotá has chemically assisted coverage for the treatment of domestic wastewater of approximately 30% at the primary level, which implies the arrival of large amounts of organic matter and different compounds in surface waters such as rivers and channels [28]. On the other hand, the evaluation of photocatalytic treatments [29] or natural systems (wetlands) [30] for the treatment of some endocrine disruptors of general interest has been studied.
\nColombia is a tropical country located north of South America and whose capital is Bogotá, has around 9 million inhabitants, also constituting the most important commercial and industrial city [31]. The main river that crosses the extension of the capital district is the Bogotá River that in turn receives as main tributaries the Tunjuelo, Fucha, and Arzobispo rivers that flow into the Northwest zone of the city; these present a significant pollution due to the discharge of wastewater and industrialists from all areas of the city.
\nFigure 1 shows the distribution area of the sampling points that included three points in the Bogotá River, in the mouths of its effluents, in three rainwater channels, three wetlands, the main sources of supply for the city, and points of the water distribution network; the potable water points were selected according to their distribution from the three current supply systems in the city, including the reservoirs used to supply each system. As for the residual water points, the determination was made at the plant (northwest of the city) and at a sewage pumping station known as the San Benito lifting plant in the southeast.
\nDistribution of monitoring points of EDs in the city of Bogotá.
The selection of the compounds for the monitoring of EDs was based on preliminary and secondary information that allowed us to know the possible sources and quantities generated, groups and commercially available categories, and availability of external standards used in the assembly of the standards and their corresponding calibration curves. These categories are as follows: pharmaceutical compounds (14 compounds), organophosphorus pesticides (20 compounds), hormones and steroids (8 compounds), and phthalates (14 compounds); all high-quality standards were obtained from RESTEK® (Pennsylvania, USA).
\nThe sampling sites were monitored at selected points according to the criteria of representativeness, access, importance, and physicochemical characteristics. In the points that had current such as rivers, sewers, and channels, composite sampling was carried out, whereas specific samples were taken in the dams and wetlands. Table 1 shows the number of points and their description and observations.

Number and type of points selected for each component of the urban water cycle of the city of Bogotá.
Samples were taken at the defined points on the dates scheduled for four monitoring days during the periods of August to December 2015 and February to May 2016. The method used to determine the flow in terms of area by velocity was to take a sample every hour for a period of 8 h, recording the values of flow rates and parameters at the measuring site (pH, conductivity, salinity, and oxygen). In drinking water, it was necessary to seek the assistance of the users of the system, who were trained to take the samples in their homes; these samples were subsequently collected for analysis.
\nAt the exit of the reservoirs used as sources of supply, rainwater channels, sections of the Bogotá River and its tributaries, we used windmills. In the wetlands, samples were taken at different points in the water mirror and in the exits and entries that could be identified, taking into account that the latter are composed of large areas of water and in some cases are fractioned. Two liters of water were taken for each sampling point in each campaign in amber glass bottles of 1 l capacity, refrigerated, and taken as soon as possible to the laboratory for preprocessing.
\nThe spatial occurrence of the pharmaceutical group was determined, in particular, the pharmaceutical compounds are of interest due to their pharmacological activity and their wide use in all contexts; recent studies catalog them as some of the compounds of greater occurrence in aquatic matrices [1, 3, 32]. As expected, the presence of this type of compound exhibits a regular behavior, indicating that these compounds come from sources of continuous contamination, possibly from domestic wastewater containing residues of these compounds that are not fully metabolized [33]. In general terms, the concentrations exhibit similar behaviors for compounds such as fluoxetine but higher in the case of trimethoprim, 860 ng L−1, relative to a range of 10–120 ng L−1 [3, 34]. The presence of carbamazepine is striking, as it is known to pose a significant risk to ecosystems and public health [35]. Based on this descriptive information, the highest occurrences are seen for fluoxetine and carbamazepine compounds in runoff waters (12%) and trimethoprim (17%) and carbamazepine (26%) in wastewater and surface waters; these compounds are commonly used as antiepileptics and antidepressants. In the case of carbamazepine, which presents the greatest occurrences, its presence in all type of aquatic matrices has been previously reported [36, 37]; its presence is related to incomplete metabolism in the body, excessive use by people and its persistence in the environment [35, 36].
\nFigure 2 shows that the points with the highest occurrence of pharmacists are in the western part of the city, specifically in the points located in the Bogota River and the mouths of its tributaries Tunjuelito, Fucha, and Arzobispo; this makes sense since they receive the runoff from city waters and also domestic and industrial wastewater resulting from wrong connections to the sewage or combined sewer system.
\nSpatial distribution of occurrence of pharmaceutical compounds.
On the other hand, it should be noted that the point observed in the eastern part of the city corresponds to the main point of supply of the drinking water network (wiesner about 70% in coverage), this was presented for the carbamazepine compound that was found in two of the samples corresponding to this point. There is no evidence of contamination sources close to this source of supply, but an alert is generated in this regard that should lead to greater monitoring, mainly to one of the reservoirs that supply this system that is known as the San Rafael Reservoir, which is very close to inhabited areas and also to lands where agriculture is carried out.
\nWithin the group of phthalates, a much more uniform distribution of these is observed within the city, which implies its distribution not only geographically speaking but in the different matrices evaluated, that is, runoff water, surface water, waste water, and drinking water. Of particular interest is the magnitude of the phthalates in the water supply network of the eastern part of the city, where it can be seen in Figure 3 that the red color is darker, which represents a higher concentration of the compound bis(2-ethylhexyl) phthalate (BEHP). The area corresponds to the oldest part of the city, where the buildings are the oldest and there are also the oldest internal storage networks.
\nSpatial distribution of occurrence of phthalates.
Aldana and Lopéz [31] ensure that the supply network of Bogotá presents a high complexity due to the variety of diameters, materials, unions, etc., which makes it extremely difficult to associate what is found to a particular factor; however, it is interesting to see the occurrence so high in all the matrices evaluated. Only some points of the drinking water network did not present any of the phthalates, the occurrence of this group of compounds was 100% in wastewater, runoff water, and surface water. The concentrations of the main compounds can be observed in Figure 4.
\nConcentration (μg L−1) of phthalates in wastewater.
Phthalates had a much higher occurrence in all evaluated matrices, including potable water points, both at source supply points and network points. Phthalates are widely extended compounds and are therefore found in all spheres of the environment [38]. However, their use as plasticizers in consumer products or industrial activities ensure that in cases such as drinking water, their presence tends to increase, specifically in the case of compounds such as N-diethylhexyl phthalate (BEHP), which is used as an additive in PVC pipes [39, 40]. In total, five compounds were found during the monitoring in all matrices, namely, DEP, DPP, BEHP, DnHP, and BnBP. For DEP, the highest occurrence was found in drinking water (28%); however, the highest occurrences in drinking water were measured for DPP and BEHP, with values higher than 80%. These compounds also showed wide variability in concentration, with most being below the concentration considered to have a negative effect on ecosystems and health [41].
\nIt should be noted that the only wastewater treatment plant in the city of Bogotá works with the technology of advanced primary treatment or chemically assisted, this plant does not present high efficiencies for the removal of emerging contaminants, for which it would be required the implementation of other secondary or tertiary treatments such as membrane bioreactors [42] or constructed wetlands [43].
\nIt is not surprising that the behavior observed in the surface waters composed of the Bogotá River and its tributaries (Figure 5) is similar to that observed in wastewater, since, as mentioned previously, these are the receptors of most of the city’s pollution, including domestic waste water and in some cases industrial waste water.
\nConcentration (μg L−1) of phthalates in surface water.
In the case of the concentrations of pharmaceutical compounds, the presence of this type of compound exhibits a regular behavior, indicating that these compounds come from sources of continuous contamination, possibly from domestic wastewater containing residues of these compounds that are not fully metabolized [33]. In general terms, the concentrations exhibit similar behaviors for compounds such as fluoxetine but higher in the case of trimethoprim, 860 ng L−1, relative to a range of 10–120 ng L−1 [3, 34]. The presence of carbamazepine is striking, as it is known to pose a significant risk to ecosystems and public health [35] (see Figure 6).
\nConcentration (μg L−1) of pharmaceuticals in wastewater.
The results by the type of water evaluated show that the highest occurrences are seen for fluoxetine and carbamazepine compounds in runoff waters (12%) and trimethoprim (17%) and carbamazepine (26%) in wastewater and surface waters; these compounds are commonly used as antiepileptics and antidepressants. In the case of carbamazepine, which presents the greatest occurrences, its presence in all type of aquatic matrices has been previously reported [36, 37]; its presence is related to incomplete metabolism in the body, excessive use by people and its persistence in the environment [35, 36]. Pharmaceutical compounds again behave similarly in terms of occurrence and concentration in both wastewater and surface water, Figure 7 shows this behavior.
\nConcentration (μg L−1) of pharmaceuticals in surface water.
Studies of emerging pollutants with the potential to act as endocrine disruptors have been carried out in other important cities of Colombia such as Cali [44], which shows the importance of expanding the information and generating new lines of research that allow clarifying the possible effects and impacts of this type of compounds on environmental health.
\nThe studies of occurrence imply the first step to be able to dimension a problematic one; in this case of environmental type, for it, it is seen the need to identify that compounds can generate risk as endocrine disruptors, in where and in what magnitude they are. This in order to compare the current situation in countries like Colombia that have little information, with what has already been defined in other contexts and in this way to be able to define better research, control, and regulatory tools.
\nThe study of occurrence in the urban water cycle of the city of Bogotá revealed that endocrine disruptors do represent a problematic to be taken into account at the management level and that compounds such as bis-2(methylhexyl)phatalate and carbamazapine are found in important concentrations and should continue to be investigated in this respect.

Amaranth is considered as one of the “superfoods” of the coming century due to its exceptional qualities in various aspects. However, the crop is not a novel discovery, and it has faced quite a number of obstacles in order to get to where it is today in terms of nutritional status and acceptance by modern day consumers as a food which is able to provide nutrition. Despite the setbacks and disuse, Amaranth has had three redeeming qualities that have earned its standing as a “superfood.” The grain is resistant to a number of weather conditions. It also contains quite a high nutrient profile, particularly proteins, and the amino acid lysine, making it a viable supplier of micronutrients to populations facing malnourishment around the globe. The third most important quality is the range of climates and conditions it can grow under. Prior to going into details about Amaranth, it is important to look into the history and nature of similar pseudocereals as a whole in order to understand the importance of Amaranth for modern times.
Amaranth, millet, barley, quinoa and buckwheat are some of the nutrient-dense foods found in the world today. Most of these pseudocereals and ancient grains were regarded as poorer in quality. As a result, these grains were shunned as “poor man’s food.” However, due to the recent emergence and awareness of their nutritional values, these pseudocereals and ancient grains are making their way back into the diets of people around the world who determinedly want to revert to healthy diets and lifestyles.
Millet’s origins could be traced to Neolithic China. Foxtail millet (
Scientists do not necessarily agree on the origins of barley, and the currently accepted theory states that it has been cultivated first in the Near East [4]. The first ancestor of barley is believed to be similar to
Barley has also seen extensive use in ancient Egypt, both as a source of nutrition and a medicine [7]. While being used in many forms to decrease the healing time of wounds, it was also used as medicine for eye diseases and phlegm [7]. Most astonishingly, barley has been used as a marker to diagnose pregnancy and for the purposes of prenatal sex determination—the validity of which has not been proven so far [7]. Much like millet, barley spread across the world and still continues to be a main source of food in many of its parts, including India. Barley tea is prepared using the roasted kernels to make a nonalcoholic drink. This is referred to as a medicinally valuable drink throughout literature [8].
Quinoa is another pseudocereal that has high nutritional properties and values. Before the Chilean and Andean countries began importing wheat, quinoa was one of the staple foods in those regions. The findings in Ayacucho, Peru and Uhle give a basis for the domestication of this plant [9]. Quinoa has thus been in cultivation from pre-Colombian times. During the Colonial period, Inca Garcilaso de la Vega has commented as follows on quinoa: “the second of the grains grown on the face of the earth gives what they call ‘quinoa’ and it is known in Spanish as ‘millet’ or small rice: because the grain and color are somewhat similar.” This establishes the fact that quinoa has been associated by the Spaniards of the time with Amaranth, which is noted by Bernabe Cobo with how the quinoa within the Iberian Peninsula is very similar to the grain which grew in Europe. Quinoa species were given different names in the context of the variety. The names differed according to color and included names such as “isualla, “kana llapi” and “cchusllnca” for wild quinoa, red quinoa and yellow quinoa, respectively [9].
The origins of buckwheat also remain debatable. However, Campbell makes a strong argument for the wild ancestor of buckwheat originating from northeastern Yunnan, China [10]. Nevertheless, evidence of buckwheat has been found in the Siba culture, or the Qinghai-Tibet plateau recently, the carbon dating result of which dated from 3610 to 3458 years before the present, making them the oldest found within the country [11]. This supports the fact that buckwheat has originated within China and in particular, the Qinghai-Tibet plateau. From there, buckwheat spread to Europe through Russia, most likely being introduced to Siberia and Germany first. It is not believed that buckwheat was cultivated within India in ancient times, but there is evidence to support that buckwheat was cultivated within the Himalayas.
Out of all the modern day pseudocereals, Amaranth is a strong and upcoming candidate which is foreseen as a remedy to malnutrition and food insecurity. In fact, as mentioned previously, Amaranth is now considered a “superfood” because it is high in protein, dietary fiber, vitamins and minerals. While grains being regularly consumed today possess a high caloric intake, they are micronutrients and protein profiles are not as holistic. A summary of the various nutrient profiles of

Taxonomic classification of
The genus
Morphology-wise, the defining characteristics of Amaranth are the inflorescence and the flowers. Hence, taxonomic classification is done mostly by careful examination of the tepal number and morphology. With regards to the general morphology, Amaranth species display erect or spreading annuals with a rough or prickly appearance. Grain amaranths have different colors in regard to flowers, stems and leaves, with shades of purple, orange, red and gold. The seeds are plentiful, while small, and occur in massive numbers, with colors such as cream, gold and pink [17]. The stems are often reddish in color and contain arranged leaves with colorful flowers [18]. The stems are longitudinally grooved and terminate in an apical large branched inflorescence [19]. Grain amaranth plants are dicots with thick, tough stems similar to those of sunflowers. The height can vary between 1.524 and 2.134 m when mature.
Leaves vary in shapes and sizes and are usually either green or purple with slender stalks. These are alternate, usually simple, with entire margins and distinct markings but without stipules, depending on the species. Flowers are either solitary or aggregated in cymes, spikes, or panicles and typically bisexual and actinomorphic. A few species have unisexual flowers. The bracteate flowers are regular with 4–5 petals, often joined. There are 1–5 stamens. The hypogynous ovary has 3–5 joined sepals [20]. The flowers have 0–5 perianth segments and 2–3 styles [20].
Seeds are borne in a utricle, which are classified as dehiscent, semi-dehiscent, or indehiscent types. The amaranth seed is quite small (0.9–1.7 mm diameter) and seed weights vary from 1000 to 3000 seeds/g. Seed colors can vary from cream to gold and pink to black. The tiny, lens shaped seeds are usually pale in color. The seed heads vary from 30 to 112 cm in diameter at the base and varied in height from 13 to 61 cm [20].
The vegetable
There is a recurring conflict based around the origins of the grain Amaranth, and the scientific community has introduced a variety of hypotheses around this debate. There are various hypotheses, none of which have been quite adequately tested as of yet. The single progenitor hypothesis [22] claims that the grain amaranths could be the result of a single progenitor species domestication that has been introgressed with other wild amaranths resulting in separate grain species. Another hypothesis claims that multiple different grain species were resultant of separate domestication incidents around separate regions, pertaining to different wild species.
The initial evidence of Amaranth cultivation dates back to the mid-Holocene period (8000–7000 BP) [24]. In Central America, seeds of
Amaranth has its history deeply imbedded in the cultures of the pre-Colombian new world. There are reasons to believe that the Aztecs used it extensively. There have been references to tributes of tons of Amaranth grain being sent to Tenochtitlan (present-day Mexico City) for emperor Montezuma [17]. The Aztecs would mix the crushed grain with human blood or milk and consume it during their rituals and festivals [17]. As such, the grain was interwoven with paganism and the rituals of the Aztecs. The Spanish conquistadors were shocked by this and banned the use and cultivation of Amaranth, pushing cultivation into small pockets, and eventually into disuse [17]. Nevertheless, as time went on, the conquistadors would distribute the seed as far as India, Nepal and China. The crop is popular among the hill tribes of these countries, and Amaranth is most intensively cultivated in these areas of higher elevation as of today [17]. Additionally, amaranth has been indoctrinated into Indian culture, earning names such as “rajgira” and “ramdana” (king seed and seed sent from god, respectively) [17]. Indian cuisine such as “laddoo” incorporates a mixture of popped amaranth seeds and honey [17].
Amaranth species such as
Due to the demanding needs of the twenty-first century’s population and their need for nourishment, the efficiency of crops such as corn, rice and maize are being questioned. As such, scientists worldwide are making new ventures into the potential of alternative grains that could supply food to the world in the years to come. Quinoa, buckwheat and other forgotten pseudocereals are being presented into the limelight due to their high nutrient content and their ease of growth. Amaranth is at the forefront when it comes to all these aspects.
The first world Amaranth conference was held in 2018, gaining 135 participants from East and Southern African countries where the grain is most needed. Topics discussed were mainly centered on nutrition, production of quality food on African land, processing, and supporting communities to change mentalities developed around Amaranth as a poor man’s crop. The underutilization of the crop seems to be the main issue, especially in countries which need its nutritional benefits the most. However, steps are being taken to change the public’s view and are effective as evident by the attendance of the African continent.
Due to the rising needs of the global population to control world hunger and to provide nutrition for the malnourished, Amaranth becomes a viable selection due to a number of reasons. Its weed-like nature and ability to withstand environmental conditions is one of these reasons. Another is its ability to provide micronutrients and macronutrients at significant amounts as a single crop, as opposed to the current food crops of the world. Amaranth contains lysine at high levels in particular, compared with other cereals and pseudocereals. The third most striking characteristic is its adaptability to change and the wide range of environments it can grow under, making it a competitive crop that can be utilized across the globe in order to cater to both the poor and the rich. This fact alone solidifies its position as a versatile food crop which could eventually become a staple food of the twenty-first century.

The chapter describes the design, implementation and integration of a ground penetrating radar (GPR) using a software defined radio (SDR) platform into the aerial drone. The chapter?s goal is first to tackle in detail the development of a custom-designed lightweight GPR by approaching interplay between hardware and software radio on an SDR platform. The SDR-based GPR system results on a much lighter sensing device compared against the conventional GPR systems found in the literature and with the capability of re-configuration in real-time for different landmines and terrains, with the capability of detecting landmines under terrains with different dielectric characteristics. Secondly, the chapter introduce the integration of the SDR-based GPR into an autonomous drone by describing the mechanical integration, communication system, the graphical user interface (GUI) together with the landmine detection and geo-mapping. This chapter approach completely the hardware and software implementation topics of the on-board GPR system given first a comprehensive background of the software-defined radar technology and second presenting the main features of the Tx and Rx modules. Robotic perception, in the scope of this chapter, encompasses the ML algorithms and techniques that empower robots to learn from sensory data and, based on learned models, to react and take decisions accordingly. The recent developments in machine learning, namely deep-learning approaches, are evident and, consequently, robotic perception systems are evolving in a way that new applications and tasks are becoming a reality. Recent advances in human-robot interaction, complex robotic tasks, intelligent reasoning, and decision-making are, at some extent, the results of the notorious evolution and success of ML algorithms. In addition, arms, grippers, or tethers could be installed to UAVs so that they can assist in constructing, transporting, and carrying payloads. In this book chapter, the control laws of the attitude and position of a quadcopter UAV have been derived basically utilizing three methods including backstepping, sliding mode control, and feedback linearization incorporated with LQI optimal controller. The main contribution of this book chapter would be concluded in the strategy of deriving the control laws of the translational positions of a quadcopter UAV. The control laws for trajectory tracking using the proposed strategies have been validated by simulation using MATLAB®/Simulink and experimental results obtained from a quadcopter test bench. Simulation results show a comparison between the performances of each of the proposed techniques depending on the nonlinear model of the quadcopter system under investigation; the trajectory tracking has been achieved properly for different types of trajectories, i.e., spiral trajectory, in the presence of unknown disturbances. Moreover, the practical results coincided with the results of the simulation results.",book:{id:"7792",slug:"unmanned-robotic-systems-and-applications",title:"Unmanned Robotic Systems and Applications",fullTitle:"Unmanned Robotic Systems and Applications"},signatures:"Abdulkader Joukhadar, Mohammad Alchehabi and Adnan Jejeh",authors:null}],onlineFirstChaptersFilter:{topicId:"22",limit:6,offset:0},onlineFirstChaptersCollection:[{id:"82223",title:"Biomechanical Design Principles Underpinning Anthropomorphic Manipulators",slug:"biomechanical-design-principles-underpinning-anthropomorphic-manipulators",totalDownloads:1,totalDimensionsCites:0,doi:"10.5772/intechopen.105434",abstract:"The biomechanical design of an artificial anthropomorphic manipulator is the focus of many researchers in diverse fields. However, modeling and learning ultrasound skills from professional sonographers are still challenging tasks that hinder the development of ultrasound systems’ autonomy. To solve these problems, we propose a learning-based framework to acquire ultrasound scanning skills from human demonstrations1. First, ultrasound scanning skills are encapsulated into a high-dimensional multi-modal model, which takes ultrasound images, probe pose, and contact force into account. The model’s parameters can be learned from clinical ultrasound data demonstrated by professional sonographers. Second, the target function of autonomous ultrasound examinations is proposed, which can be solved roughly by the sampling-based strategy. The sonographers’ ultrasound skills can be represented by approximating the limit of the target function. Finally, the robustness of the proposed framework is validated with the experiments on ground-true data from sonographers.",book:{id:"10823",title:"Cognitive Robotics",coverURL:"https://cdn.intechopen.com/books/images_new/10823.jpg"},signatures:"Miao Li and Xutian Deng"},{id:"82057",title:"An Episodic-Procedural Semantic Memory Model for Continuous Topological Sensorimotor Map Building",slug:"an-episodic-procedural-semantic-memory-model-for-continuous-topological-sensorimotor-map-building",totalDownloads:5,totalDimensionsCites:0,doi:"10.5772/intechopen.104818",abstract:"For humans to understand the world around them, learning and memory are two cognitive processes of the human brain that are deeply connected. Memory allows information to retain and forms an experiences reservoir. Computational models replicating those memory attributes can lead to the practical use of robots in everyday human living environments. However, constantly acquiring environmental information in real-world, dynamic environments has remained a challenge for many years. This article proposes an episodic-procedure semantic memory model to continuously generate topological sensorimotor maps for robot navigation. The proposed model consists of two memory networks: i) episodic-procedural memory network (EPMN) and ii) semantic memory network (SMN). The EPMN comprises an Incremental Recurrent Kernel Machines (I-RKM) that clusters incoming input vectors as nodes and learns the activation patterns of the nodes for spatiotemporal encoding. The SMN then takes neuronal activity trajectories from the EPMN and task-relevant signals to update the SMN and produce more compact representations of episodic experience. Thus, both memory networks prevent catastrophic forgetting by constantly generating nodes when the network meets new inputs or updating node weights when the incoming input is similar to previously learned knowledge. In addition, idle or outlier nodes will be removed to preserve memory space.",book:{id:"10823",title:"Cognitive Robotics",coverURL:"https://cdn.intechopen.com/books/images_new/10823.jpg"},signatures:"Wei Hong Chin, Naoyuki Kubota and Chu Kiong Loo"},{id:"81922",title:"Skill Acquisition for Resource-Constrained Mobile Robots through Continuous Exploration",slug:"skill-acquisition-for-resource-constrained-mobile-robots-through-continuous-exploration",totalDownloads:14,totalDimensionsCites:0,doi:"10.5772/intechopen.104996",abstract:"We present a cognitive mobile robot that acquires knowledge, and autonomously learns higher-level abstract capabilities based on play instincts, inspired by human behavior. To this end, we (i) model skills, (ii) model the robot’s sensor and actuator space based on elementary physical properties, and (iii) propose algorithms inspired by humans’ play instincts that allow the robot to autonomously learn the skills based on its sensor and actuator capabilities. We model general knowledge in the form of competencies (skills) of the mobile robot based on kinematic properties using physical quantities. Thus, by design, our approach has the potential to cover very generic application domains. To connect desired skills to the primitive capabilities of the robot’s sensors and actuators, it playfully explores the effects of its actions on its sensory input, thus autonomously learning relations and dependencies and eventually the desired skill. KnowRob is used for knowledge representation and reasoning, and the robot’s operation is based on ROS. This proposal offers an account of human cognitive computation, and it has been considered by its proponents as revolutionary and capable of integrating research concerning human cognition with new evidence provided by fields of biology and neuroscience. However, some complex cognitive capacities still present a challenge for explanations constructed by using this theoretical structure. In this chapter, I make a presentation of some of the central tenets of this framework and show in what dimensions it helps our understanding of human cognition concerning aspects of capacities, such as visual perception and memory consolidation. My central goal, however, is to show that to understand and explain some particular human cognitive capacities, such as self-consciousness and some conscious informal reasoning and decision making, the framework shows substantial limitations. The presence of service robots in healthcare demands special attention, whether it is in the automation of menial labour, prescription distribution, or offering comfort. In this chapter, we examine the several applications of healthcare-oriented robots in the acute, ambulatory and at-home settings. We discuss the role of robotics in reducing environmental dangers, as well as at the patient’s bedside and in the operating room, in the acute setting. We examine how robotics can protect and scale up healthcare services in the ambulatory setting. Finally, in the at-home scenario, we look at how robots can be employed for both rural/remote healthcare delivery and home-based care. In addition to assessing the current state of robotics at the interface of healthcare delivery, we describe critical problems for the future where such technology will be ubiquitous. Patients, health care workers, institutions, insurance companies, and governments will realize that service robots will deliver significant benefits in the future in terms of leverage and cost savings, while maintaining or improving access, equity, and high-quality health care.",book:{id:"10657",title:"Advances in Service Robots",coverURL:"https://cdn.intechopen.com/books/images_new/10657.jpg"},signatures:"Rohit Singla and Christopher Nguan"}],onlineFirstChaptersTotal:7},preDownload:{success:null,errors:{}},subscriptionForm:{success:null,errors:{}},aboutIntechopen:{},privacyPolicy:{},peerReviewing:{},howOpenAccessPublishingWithIntechopenWorks:{},sponsorshipBooks:{sponsorshipBooks:[],offset:8,limit:8,total:0},allSeries:{pteSeriesList:[{id:"14",title:"Artificial Intelligence",numberOfPublishedBooks:9,numberOfPublishedChapters:89,numberOfOpenTopics:6,numberOfUpcomingTopics:0,issn:"2633-1403",doi:"10.5772/intechopen.79920",isOpenForSubmission:!0},{id:"7",title:"Biomedical Engineering",numberOfPublishedBooks:12,numberOfPublishedChapters:103,numberOfOpenTopics:3,numberOfUpcomingTopics:0,issn:"2631-5343",doi:"10.5772/intechopen.71985",isOpenForSubmission:!0}],lsSeriesList:[{id:"11",title:"Biochemistry",numberOfPublishedBooks:31,numberOfPublishedChapters:314,numberOfOpenTopics:4,numberOfUpcomingTopics:0,issn:"2632-0983",doi:"10.5772/intechopen.72877",isOpenForSubmission:!0},{id:"25",title:"Environmental Sciences",numberOfPublishedBooks:1,numberOfPublishedChapters:11,numberOfOpenTopics:4,numberOfUpcomingTopics:0,issn:"2754-6713",doi:"10.5772/intechopen.100362",isOpenForSubmission:!0},{id:"10",title:"Physiology",numberOfPublishedBooks:11,numberOfPublishedChapters:141,numberOfOpenTopics:4,numberOfUpcomingTopics:0,issn:"2631-8261",doi:"10.5772/intechopen.72796",isOpenForSubmission:!0}],hsSeriesList:[{id:"3",title:"Dentistry",numberOfPublishedBooks:8,numberOfPublishedChapters:129,numberOfOpenTopics:2,numberOfUpcomingTopics:0,issn:"2631-6218",doi:"10.5772/intechopen.71199",isOpenForSubmission:!0},{id:"6",title:"Infectious Diseases",numberOfPublishedBooks:13,numberOfPublishedChapters:112,numberOfOpenTopics:3,numberOfUpcomingTopics:1,issn:"2631-6188",doi:"10.5772/intechopen.71852",isOpenForSubmission:!0},{id:"13",title:"Veterinary Medicine and Science",numberOfPublishedBooks:11,numberOfPublishedChapters:105,numberOfOpenTopics:3,numberOfUpcomingTopics:0,issn:"2632-0517",doi:"10.5772/intechopen.73681",isOpenForSubmission:!0}],sshSeriesList:[{id:"22",title:"Business, Management and Economics",numberOfPublishedBooks:1,numberOfPublishedChapters:16,numberOfOpenTopics:2,numberOfUpcomingTopics:1,issn:"2753-894X",doi:"10.5772/intechopen.100359",isOpenForSubmission:!0},{id:"23",title:"Education and Human Development",numberOfPublishedBooks:0,numberOfPublishedChapters:4,numberOfOpenTopics:1,numberOfUpcomingTopics:1,issn:null,doi:"10.5772/intechopen.100360",isOpenForSubmission:!0},{id:"24",title:"Sustainable Development",numberOfPublishedBooks:0,numberOfPublishedChapters:14,numberOfOpenTopics:5,numberOfUpcomingTopics:0,issn:null,doi:"10.5772/intechopen.100361",isOpenForSubmission:!0}],testimonialsList:[{id:"6",text:"It is great to work with the IntechOpen to produce a worthwhile collection of research that also becomes a great educational resource and guide for future research endeavors.",author:{id:"259298",name:"Edward",surname:"Narayan",institutionString:null,profilePictureURL:"https://mts.intechopen.com/storage/users/259298/images/system/259298.jpeg",slug:"edward-narayan",institution:{id:"3",name:"University of Queensland",country:{id:null,name:"Australia"}}}},{id:"13",text:"The collaboration with and support of the technical staff of IntechOpen is fantastic.
