Alfredo Aires is an Auxiliary Professor in the Department of Agronomy at the University of Trás-os-Montes and Alto Douro (UTAD) and a researcher in the Centre for the Research and Technology of Agro-Environmental and Biological Sciences (CITAB), Agronomy Department, Vila Real, Portugal in the agronomic field. He was born Vila Real, Trás-os-Montes, Portugal at 23 of March of 1973. Accomplished the Course of Agricultural Engineer with 15 values in 20, in January of 1997 at the University of Trás-os-Montes e Alto Douro, Vila Real, Portugal. In the same university, in March 2004, he obtained an MSc Degree in Horticulture and Ornamental Plants, and later in December 2009, got a Ph.D. degree in Agronomical Sciences with the Thesis entitled 'Bioactive compounds in Brassicaceae plants and its effect on human health”. Until now, Alfredo Aires has h-índex in Scopus and in Web of Science/ISI 20. The actual main research interests are plant and crop composition; primary and secondary metabolites; polyphenols, glucosinolates agro-food byproducts and wastes valorization; Extraction and purification methods; antioxidant activities, antimicrobial properties, and HPLC quantification.

Tannins are one of the polyphenols group found in plants and are mainly studied because of their structural properties and bioactive behavior. Every year new findings concerning their properties and functions are made, and today concerns are mainly focused on how they can be used efficiently in the wood, food, textile, health, and pharmaceutical industries. Thus, the aim of this book is to present the most updated information on the structural properties of tannins, their food sources and variations, biological properties, and health, among other important issues. In addition, the most recent methods used for their isolation, quantifications, and industrial applications will also be covered.
